BALCONY Restaurant pays tribute to “Atlantic”
the first steamship of the Insulana Navigation Company with a wine dinner Rotas da Insulana
The Rotas da Insulana Wine Dinner returns to the BALCONY Restaurant at the Grand Hotel Açores Atlântico on the island of São Miguel with a new wine and food journey.
On March 22nd, Terra Nostra Garden Hotel’s Executive Chef Nuno Gonçalves will create an exclusive five-star menu with five stops – unforgettable tasting moments with wine pairing- led by head waiter Acácio Oliveira, in partnership with Quinta do Vallado.
“Gastronomic Journey from the Continent to the Atlantic” is the theme chosen for the eighth edition of the Rotas da Insulana Wine Dinner, which this time invites visitors to embark on the journey of the “Atlântico”, the company’s first steamship. Built in Southampton, England, the “Atlântico” ensured, for decades, the maritime connection between mainland Portugal and the Azores archipelago.
Starting from Southampton, passing through Lisbon, São Miguel, Terceira, São Jorge, Graciosa and Faial, this menu offers a unique experience of national flavors and traditions. Each dish will be carefully crafted with fresh, local ingredients, providing a true gastronomic journey between the islands and the mainland in perfect marriage with a dedicated wine menu.
In Lisbon, Amuse-Bouche presents a reinvented Bacalhau à Brás: semi-cured confit cod, rosti potatoes, low-temperature egg yolk and caviar. The journey continues through the islands: in São Miguel, Cozido das Furnas is presented with regional cabbage stuffed with sausage, stewed meats and foie gras, rice and stewed consommé. In Terceira, the Angus Tartar from Terceira stands out with crispy rump steak and buttery cheese, pickled mushrooms, truffle emulsion and garlic bread. São Jorge offers the Grouper and Clam Loin from Fajã de Santo Cristo with sparkling wine, lemon risotto and bulhão pato foam. At Graciosa, the Stuffed Goat Saddle comes with crispy stewed goat, green asparagus, black garlic and Verdelho sauce. The trip ends on the island of Faial with a White Chocolate and Cheese Cheesecake, “O Morro”, with mango, lime and passion fruit.
“In this edition, we follow the voyage of the “Atlântico”, a ship that for several years guaranteed the maritime connection of cargo and passengers between the continent and the Azores archipelago. With this trip, we seek to pay homage to tradition by exploring local and national cuisine and products with a current perspective”, explains the guest executive chef, Nuno Gonçalves.
