Aged Iberian meat and Portuguese wines: to enjoy calmly at this wine dinner

Steakhouse 1828, at WOW (Vila Nova de Gaia), is preparing a wine dinner for June 7th. In a union between El Capricho meats, known as “the best in the world”, and Esporão wines, a brand born in Alentejo and produced to the rhythm of nature, a meal is proposed with the perfect pairing and ideal setting.

The menu created specifically for the night of June 7th can be enjoyed for €60 and promises to offer the best pairing experience. This is a wine dinner proposed by WOW, which brings together the 1828 restaurant, El Capricho meats and Esporão wines.

“We propose a tasting menu with a beginning, middle and end, carefully prepared, which aims to provide the necessary balance between the proposed dishes and the wines that pair with them. All of this, to be savoured with all the refinement, in the beautiful setting of 1828 and with the excellence of service that those who visit us are accustomed to”, says Silvina Coelho, chef at 1828.

Priscila Haddad, sommelière at WOW, emphasizes that “Looking at the identity of the selected dishes, premium level wines are combined, which allow an ode to harmonization at each moment”.

A gastronomic journey in different moments

As for the menu of this wine dinner, the journey begins with a relaxed tasting of Esporão olive oils, exclusively of the extra virgin or virgin type, produced using natural methods and entirely traditional processes, preserving the pure juice of the olives.

Afterwards, the welcome is given with an aged beef loin croquette, topped with homemade béchamel and citrus mayonnaise. For other tastes, there is smoked salmon with crème fraîche and lime, complemented by crunchy caper. Or cod tartare with coriander, olive powder and red onion. In any of the canapé options, Esporão Colheita Branco is served, a wine produced exclusively from grapes grown at Herdade do Esporão, following organic farming practices.

Still paired with the same wine, the starters include beef tartare, with egg yolk, Dijon mustard, a touch of spice, avruga and rosemary toast. The other starter suggestion is a low-temperature short rib, with aged jus. In this case, it serves Esporão Moreto Talha, produced by the wine brand according to the heritage left by the Romans when they passed through Alentejo. To produce Roman-style carved wines, the wine brand uses old taplas, with a capacity between 550 and 960 litres, allowing those who taste the nectar a true journey through time.

Returning to the present, a combination of flavours is served: blood orange sorbet, paired with sparkling wine, to refresh the palate and pave the way for the main course.

The highlight of the meal comes with the cowboy steak, a piece of excellence from 1828, grilled on a josper, and cooked with ecological charcoal. This is a cut of aged meat, served with homemade potato chips, greens and confit cherry tomatoes. In the glass, it pairs with Esporão Private Selection Red, a wine that results from the combination of unique parcels, which demonstrates the diversity and richness of Esporão and which the dinner organizers believe is the ideal pair for the main course of this dinner.

To end the meal – and in contrast to the strength and consistency of the previous dish – something citrusy and fresh, lighter and more elegant is chosen: lemon meringue pie, confit and citrus gel, refreshingly paired with Esporão Private Selection.
