With over 19 years of international experience in five countries and four continents, Márcio Baltasar has worked in some of the world’s most demanding kitchens, notably for his nine years as Head Pastry Chef at the two-Michelin-starred Ocean restaurant, where he made a decisive contribution to the affirmation of Portuguese pastry on the international gastronomic scene. Recognised as “Best Pastry Chef of Portugal” in 2022, the chef has developed a career marked by innovation, technical rigour, and creative ability, translated into the creation of signature desserts that have become a benchmark for their elegance, contemporary style, and connection to the seasonality of the products.
In addition to his career in restaurants, Márcio Baltasar founded Baltazar Pastry & Co., a project specialising in gastronomic consulting for leading brands, hotels, and restaurants, and has recently collaborated in New York on the development of a dessert menu that reinterprets Portuguese tradition for an international audience. His vision combines Michelin-starred technique with a refined aesthetic sense and a sustainable and innovative approach to pastry.
Chef Márcio Baltasar’s career, marked by technical rigour, creativity, and mastery of the most advanced preparation techniques, finds a natural continuation in the gastronomic universe of Casa do Marquês, which is also responsible for the EPUR restaurant, distinguished with a Michelin star and recognised for the gastronomic vision of Chef Vincent Farges.
