500 gr small clean cuttlefish
70 gr garlic
1 dl olive oil
2 bay leaves
1 coriander sauce
300 gr small white potatoes
If you choose fresh shocks, you should clean them very well, drain them, season with salt and set aside. If frozen, opt for the already clean cuttlefish, let thaw and season with a little salt.
Wash the small potatoes thoroughly and bake in shell and a little salt.
Cook olive oil, chopped garlic and bay leaf
When it is very hot, add the clean wafers and let fry.
Season with the chilli and a portion of coriander. Cover, shake the frying pan from time to time and let it cook until the buns are tender.
Serve the Algarvian Choquinhos sprinkled with the remaining coriander and accompanied by the boiled potatoes.
