Countdown to the night that pays homage to Alentejo gastronomy

There are 5 days left until the dinner that promises to surprise you on a journey through the flavours of the region, which will take place at the restaurant of the M’AR De Ar Aqueduto Hotel.

The six-hand dinner is right there at the M’AR De AR Aqueduto hotel restaurant, Degust’AR, where on the 10th of August, under the Alentejo moonlight, chefs António Nobre, Tiago Moreno and Luís Lopes will join local producers, in an unmissable gastronomic experience.

The dinner, which aims to involve local producers in Degust’AR’s typically Alentejo cuisine, features a menu prepared by six hands by chefs António Nobre, Tiago Moreno and Luís Lopes, where the protagonists are gastronomy, products and local producers such as Carne Mertolenga, prickly pear from Pepe Aromas and pike perch from producer Pedro Santos.

A dinner with Alentejo roots, from the inspiration, the chefs, to the dishes and products, made up of seven moments that promise to surprise all palates. The journey begins, of course, with the cover, made up of a variety of breads, olive oil and marinated olives, creamy lobster pâté with chives and a black pork payola butter that pays homage to the region; This is followed by an amuse bouche of a refreshing cold tomato cream with braised sardine fillet and fleur de sel; the starter contrasts sweet and savory in a combination of unique flavors of prickly pear in three textures with Iberian pork ham; followed by the fish dish, pink pike perch with stewed strudel, liver bisque and pennyroyal oil brimming with unforgettable fragrances from the region; The meat dish is Mertolengo DOP veal in a frying pan with celery puree, pak choi sautéed with thyme and lemon and black garlic aioli; to sweeten the palate, a pre-dessert made up of delicious chocolate spheres with ganache refreshed with melon pulp and lemon gel; and finally, dessert, an aromatic prickly pear panna cotta with basil ice cream and strawberries.

The menu for this dinner will only be available on the night of August 10th, and on this date, Degust’AR will only operate under this menu. This gastronomic proposal is an ode to the experiences that cooking allows, with this menu in itself being a journey that explores various senses and moments. A journey towards the interior of Alentejo where the influences of the dishes presented represent the gastronomic journeys of each of the chefs and give a more comprehensive view of the best in the world of gastronomy.
