The Lisbon restaurant of the hotel group M’AR De AR brings surprising new dishes to its menu, signed by Chef António Nobre.

With a new menu with the signature of Chef António Nobre, the renowned Degust’AR Lisboa, restaurant of the M’AR De Ar group, namesake of the Évora restaurant, offers a wonderful journey through the Alentejo flavours without having to leave Lisbon.

Through the menu and decoration, carefully thought out, Degust’AR Lisboa combines innovation with tradition, reinforcing the authentic “Alantejanidade” of the space and unique in the capital. Responsible for this sensory experience is Chef António Nobre, who is the curator of all spaces of the M’AR De AR group, ensuring through the quality of his cuisine, the well-deserved projection of Alentejo cuisine.

The new menu promises to delight all palates through meat dishes, fish and also vegetables. In the new dishes of Degust’AR Lisboa, for starters and to share, are unmissable the Alentejo cheeses, Serpa cheese, Nisa cheese, Évora cheese with homemade pumpkin jam; Pica on the board composed of black pork secrets, dehydrated garlic mayonnaise and toasted Alentejo bread; the creamy Chicken Pies; the fragrant Pleurotes do Alentejo on the grill with salt flower and lemon thyme; crunchy Torresmos do Rissol and also the Scallops with vinaigrette three of peppers and chips of paio of the Alentejo pork loin.

For meat lovers, the irreverent Tartare of Veal Tenderloin (PVP 26€) with sliced veal, purple onion, cornichons, parsley, mustard, egg yolk truffle, chicory, accompanied by fries with oregano; the succulent Bife da vazia à degust ‘AR Lisboa (PVP 22€) of Mertolengo PDO veal, with a sauce consisting of 25 ingredients, homemade chips and salad; and also, the unmissable Pork hock (PVP 26€) cooked for 12 hours at low temperature with an aromatic rice Carolino lime that contrasts with the tenderness of the pig, chilli oil and red onion compote, a combination that promises to surprise. For flavours of the sea, among the new dishes, the tender Scallops (PVP 26€) stand out in olive oil with salt flower combined with watercress puree, shimeji mushrooms and whitewash; the Sea grouper loin (PVP 32€) with lime sauce, cherovia puree, Fried bread, Pak Choi kale and parsley oil; and the legitimate Loin de Pargo (PVP 35€) baked in the oven, which buttery, has the touch of the region through the Iberian pork bacon that when it joins the Carolino rice of prawns and ginger is to eat and cry for more.

For meat lovers, the irreverent Veal Tenderloin Tartar (PVP 26€) stands out with chopped veal, purple onion, cornichons, parsley, mustard, and yolk Neither meat nor fish, options abound to invoke the flavours of the region even in vegetarian dishes, such as the crispy Goat Cheese Muggle (€14 PVP), with a delicious jam of quince, honey, mix of green leaves, seasoned with lemon vinaigrette; or the grilled Chickpea Burger (€20 PVP) with fried polenta and lemon mayonnaise, an option that impresses in taste; also surprising are the Seitan Meatballs (PVP 18€) with tomato sauce and Thai rice or the Marinated Tofu (PVP 22€) in sautéed chilli mass in virgin olive oil and vegetable couslow. To top it off, the perfect combination of creaminess and crispness with the Chocolate Mousse 70% cocoa with roasted hazelnut ice cream, salted caramel and almond tiles (PVP 8.5€).

Signing the letters of the three restaurants of the group, Degust’AR Évora, Sabores do Alentejo and Degust’AR Lisboa, Chef António Nobre heads the kitchen of the latter. Born in Beja, Alentejano always attended to the culinary skills of his mother and grandmother where he is inspired every day by the discovery and constant exploration of smells and flavours that originate the journey of flavours that is the menu of Degust’AR Lisboa, resulting in a kitchen of memories where the Mediterranean gastronomy goes hand in hand with the Alentejo.

Among several activities, Chef António Nobre is the author of two books, with a third on the way, confrere of the Confraria Gastronómica do Alentejo and has attended, since 2002, the prestigious Congress of San Sebastian“Lo Mejor de la Gastronomia”. In 2002, he was a pioneer in the initiative of preparing a letter of the various national olive oils and was several times awarded with awards such as “Panela ao Lume” and “Gastronomia com Vinho do Porto”, also collaborating with various websites and newspapers such as Expresso.

Combining all that the Alentejo has to offer, Degust’AR Lisboa, located on Rua Latino Coelho 63, presents itself as a small haven of the capital that dates back to the memories and flavours of the region and reflects the Alentejo hospitality in a new menu that promises to surprise. The Degust’AR Lisboa has a capacity for 100 people and its opening hours are from Monday to Saturday from 12:30 to 15:00 and from 19:30 to 23:00.
