Farfalle pasta with tomatoes and sardines, a simple and quick recipe to prepare. If you prefer to replace sardines with canned tuna, the result is divine.

150 gr farfalle or other short pasta
1 can pickled spicy tomato sardines
1 small onion
olive oil (enough)
75 gr cherry tomatoes
1 sprig fresh coriander (enough)
Boil the pasta in salted water until al dente and set aside some of the cooking water.
In the meantime chop the onion and sauté it in a little olive oil until it begins to become translucent.
Then add the sardines without the pimple and tin sauce.
Cut the tomatoes in half and add to the preparation, season with the pepper and rectify the salt.
Let it simmer for a few minutes until the tomatoes are soft. Reserve.
Once the pasta is cooked, drain it and wrap it in the sardine and tomato preparation.
Add a little of the pasta cooking water to help loosen the pasta and wrap it in the sauce.
Serve immediately sprinkled with fresh cilantro.
If you prefer you can replace sardines with pickled tuna, the result is wonderful. A dish much appreciated by children in holiday times.
