Portuguese Pumpkin Fritters

Ingredients

  • 200g pumpkin puree
  • 250g flour
  • 4g of salt
  • 14g baking powder
  • 5 eggs
  • 50g of sugar

Recipe

  1. Cook approximately 220g of raw pumpkin until soft. Drain and mash with a fork (yields approximately 200g of pumpkin puree);
  2. Separate eggs and whisk the egg whites until soft peaks form;
  3. Beat the yolks with the sugar, add the puree and finally the dry ingredients;
  4. Fold in the egg whites;
  5. Fry in vegetable oil until they are golden on both sides;
  6. Mix sugar and cinnamon and cover the fritters with this mixture.
